Moroccan Twice-Fried Tofu Tagine
A twist on traditional Moroccan tagine, this dish combines crispy fried tofu with the rich flavors of a traditional tagine.
Ingredients
- β1 block (12 oz) Tofufirm or extra-firm
- β2 tablespoons Olive oilfor frying
- β2 teaspoons Moroccan spice blendor to taste
- β1 teaspoon Cuminground
- β1 teaspoon Paprikasmoked or regular
- β1/2 teaspoon Saltto taste
- β1/4 teaspoon Black pepperto taste
- β1 medium Diced onionfor the tagine
- β1 medium Diced bell pepperfor the tagine
- β1/4 cup Chopped fresh parsleyfor garnish

1. Cut the tofu into 1-inch cubes and set aside.

2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

3. Add the tofu to the skillet and fry until golden brown on all sides, about 5 minutes.

4. Remove the tofu from the skillet and set aside.

5. In the same skillet, add the remaining 1 tablespoon of olive oil.

6. Add the diced onion and bell pepper to the skillet and cook until softened, about 5 minutes.

7. Add the Moroccan spice blend, cumin, paprika, salt, and black pepper to the skillet and cook for 1 minute.

8. Add the fried tofu back to the skillet and toss to coat with the spice mixture.

9. Transfer the tofu mixture to a serving dish and garnish with chopped parsley.
