Tender Algerian Lamb Tagine
A classic North African dish made with tender lamb, flavorful spices, and dried fruits.
Ingredients
- β1.5 kg Lamb shoulderBone-in for flavor
- β2 tbsp Olive oilFor browning lamb
- β1 large OnionChopped
- β3 cloves GarlicMinced
- β2 tsp Algerian spice blendAvailable at Middle Eastern markets
- β1 tsp CinnamonGround
- β1/2 tsp GingerGround
- β1 cup Dried apricotsChopped
- β1 cup Dried prunesChopped
- β1 cup Chicken brothLow-sodium

Heat oil in a large Dutch oven over medium-high heat.

Brown lamb on all sides, about 5 minutes.

Remove lamb and set aside.

Add onion and garlic to pot and cook until softened, about 5 minutes.

Add spice blend, cinnamon, and ginger to pot and cook for 1 minute.

Add apricots and prunes to pot and cook for 2 minutes.

Add chicken broth to pot and bring to a boil.

Return lamb to pot and cover.

Transfer pot to oven and cook at 300Β°F (150Β°C) for 2.5 hours, or until lamb is tender.

Serve lamb with sauce spooned over the top.
