Bitter Potato Paratha
A unique Indian-inspired flatbread filled with cooked potatoes and bitter greens.
Ingredients
- β2 medium potatopeeled and diced
- β1 bunch tender bitter greenschopped
- β4-6 sheets parathahomemade or store-bought
- β2 tbsp ghee or oilfor brushing paratha
- βto taste salt
- β1/2 tsp red chili powderoptional
- β1/4 tsp garam masalaoptional
Instructions

1. In a large pan, heat 1 tbsp of ghee or oil over medium heat.

2. Add the chopped bitter greens and cook until wilted.

3. Add the diced potatoes and cook until they are tender.

4. Season with salt, red chili powder, and garam masala to taste.

5. Meanwhile, brush the paratha sheets with the remaining 1 tbsp of ghee or oil.

6. Place a paratha sheet on a flat surface and spoon some of the potato-bitter green mixture onto one half of the paratha.

7. Fold the other half of the paratha over the filling to form a half-moon shape.

8. Brush the edges of the paratha with a little water and press the edges together to seal the paratha.

9. Heat a non-stick pan or griddle over medium heat and cook the paratha for 1-2 minutes on each side, until golden brown and crispy.

10. Repeat with the remaining paratha sheets and filling.
