Saudi Arabian Lamb Tagine

Ingredients
- β1 1/2 pounds lamb shoulder
- β1 large onionchopped
- β3 cloves garlicminced
- β2 tablespoons tender saudi spice blend
- β1 cup arabian coffeestrong brew
- β1/2 cup briny olivespitted
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Instructions

Heat the oil in a large tagine or Dutch oven over medium-high heat.

Add the lamb and cook until browned on all sides, about 5 minutes.

Add the onion and garlic and cook until the onion is softened, about 5 minutes.

Add the spice blend and cook for 1 minute.

Add the coffee and bring to a boil.

Reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.
