French Lentil Stew
A hearty, comforting stew made with red lentils, tender beef, and a variety of aromatics.
Ingredients
- β1 cup dried red lentils lentil
- β1 pound beef stew meat tender
- β2 cloves garlic, minced chinese
- β1 large onion, chopped onion
- β2 large carrots, peeled and chopped carrot
- β2 stalks celery, chopped celery
- β6 slices of bacon, diced bacon
Instructions

Heat the oven to 300Β°F (150Β°C).

In a large Dutch oven, cook the bacon over medium heat until browned. Remove the bacon with a slotted spoon.

Add the garlic, onion, carrot, and celery to the pot and cook until the vegetables are tender.

Add the beef to the pot and cook until browned on all sides.

Add the lentils, diced bacon, and enough broth to cover the ingredients. Bring to a boil, then cover and transfer to the preheated oven.

Bake for 1 hour and 30 minutes, or until the lentils are tender.

Season with salt and pepper to taste.

Serve hot, garnished with fresh herbs if desired.
