Beet and Earthy British Casserole
A hearty, comforting casserole filled with earthy flavors and sweet beets. Perfect for a chilly evening.
Ingredients

- β1 cup British mushroomssliced
- β1 cup Earthly portobello mushroomssliced
- β1 cup Tender pearl onionspeeled and sliced
- β1 packet Casserole mixstore-bought or homemade
- β2 tablespoons Butterunsalted
- βto taste Saltoptional
- βto taste Black pepperoptional

Preheat the oven to 375Β°F (190Β°C).

In a large skillet, melt the butter over medium heat. Add the sliced mushrooms and cook until they release their moisture and start to brown.

Add the diced beets, sliced pearl onions, and a pinch of salt and pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally.

In a separate mixing bowl, prepare the casserole mix according to the package instructions.

In a 9x13 inch baking dish, create a layer of the cooked mushroom and beet mixture.

Top the layer with a portion of the casserole mix, followed by another layer of the mushroom and beet mixture.

Continue this pattern until all the ingredients are used, finishing with a layer of casserole mix on top.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 15-20 minutes, or until the casserole is golden brown and hot throughout.
