Ethiopian-Style Tibs with Fenugreek and Dulet
A traditional Ethiopian dish made with sautéed dulet, fenugreek, and spices. Serve with injera or rice.

- ●4 Dulet (Ethiopian sausages)
- ●1 cup Fenugreek leaves
- ●1 medium Onion
- ●3 cloves Garlic
- ●1 tsp Red pepper flakes
- ●2 tsp Ethiopian berbere spice
- ●to taste Salt
- ●to taste Black pepper
- ●2 tbsp Olive oil

Instructions

Heat oil in a large skillet over medium-high heat.

Add the dulet and cook until browned, about 5 minutes.

Add the onion and garlic and cook until the onion is translucent, about 3 minutes.

Add the fenugreek leaves and cook until wilted, about 2 minutes.

Add the berbere spice, salt, and black pepper, and stir to combine.

Serve hot with injera or rice.

Note: If using fresh fenugreek, cook for an additional 2-3 minutes to allow the leaves to wilt.
