Filipino Beef Stew
A hearty and flavorful stew made with tender beef, inspired by Filipino cuisine.
Ingredients
- β1.5 pounds Beef stew meatcut into 1-inch cubes
- β1 large Onionchopped
- β3 cloves Garlicminced
- β2 tablespoons Tomato paste
- β2 tablespoons Fish sauce
- β1 tablespoon Patis (fish sauce or soy sauce)
- β1 tablespoon Brown sugar
- β2 Bay leaves
- β1 teaspoon Black pepper
- β2 tablespoons Vegetable oil

Heat oil in a large pot or Dutch oven over medium-high heat.

Brown the beef in batches, about 5 minutes per batch, then set aside.

Add more oil if necessary, then sautΓ© the onion and garlic until softened.

Add the tomato paste and cook for 1 minute, stirring constantly.

Add the fish sauce, patis, and brown sugar, and cook for 1 minute.

Add the browned beef back into the pot, along with the bay leaves and black pepper.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the beef is tender.

Season with salt to taste, then serve hot over rice.
