Mexican Quinoa Bowl with Floral Tenders
A flavorful and nutritious bowl filled with tender chicken, quinoa, and a hint of floral spices.
Ingredients
- β1 1/2 pounds chicken breast
- β1 cup quinoa
- β2 tablespoons floral spice blend
- β1 teaspoon cumin
- β1/2 teaspoon chili powder
- β2 tablespoons lime juice
- β2 tablespoons olive oil
- βto taste salt
- β1 cup peppers and onions

1. Preheat oven to 400Β°F (200Β°C).

2. In a large bowl, whisk together floral spice blend, cumin, chili powder, and lime juice.

3. Add the chicken breast to the bowl and toss to coat. Let marinate for at least 30 minutes.

4. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on both sides, about 5-6 minutes per side.

5. Transfer chicken to a baking sheet and bake for 15-20 minutes, or until cooked through.

6. Cook quinoa according to package instructions.

7. In a large skillet, heat a little bit of olive oil over medium heat. Add peppers and onions and cook until tender.

8. To assemble the bowls, place a scoop of quinoa on the bottom, followed by sliced chicken, peppers and onions, and a sprinkle of salt.
