Herbal Chicken Trifle
A traditional British trifle dessert with a twist of herbal flavors from fresh herbs.
Ingredients
- β1 cup Tender sponge cake
- β1 cup Herbal jelly
- β1/4 cup Fresh mint leaveschopped
- β1/4 cup Fresh basil leaveschopped
- β1 cup Chicken broth
- β1 cup Heavy cream
- β1/2 cup Sugar
- β2 Egg yolks
- β1 tablespoon Lemon zest

Cut the sponge cake into small pieces and set aside.

In a medium saucepan, combine the herbal jelly, chicken broth, and sugar.

Heat over low heat, stirring until the jelly dissolves.

Bring the mixture to a simmer and cook for 5 minutes.

Stir in the heavy cream and cook for an additional 2 minutes.

Strain the mixture into a clean bowl and let cool to room temperature.

In a separate bowl, whisk together the egg yolks and lemon zest.

Add the egg yolk mixture to the cooled jelly mixture and whisk until smooth.

Fold in the chopped fresh herbs.

To assemble the trifle, place a layer of sponge cake in the bottom of a large bowl.

Pour half of the herbal jelly mixture over the cake.

Repeat the layers, ending with a layer of cake on top.
