Irish Lamb Stew
A hearty, comforting Irish lamb stew made with tender lamb, root vegetables, and a rich gravy.
Ingredients
- β1 pound Lamb shouldercut into 1-inch cubes
- β2 medium Carrotspeeled and chopped
- β2 large Potatoespeeled and chopped
- β1 medium Onionschopped
- β3 cloves Garlicminced
- β2 tablespoons All-purpose flourfor dusting lamb
- β2 cups Beef brothlow-sodium
- β1 cup Red wineoptional
- β2 sprigs Fresh thymechopped
- β Salt and pepper

Heat oil in a large Dutch oven over medium-high heat.

Dust lamb cubes with flour, shaking off excess.

Brown lamb in batches until browned on all sides, about 5 minutes. Transfer to a plate.

Reduce heat to medium and cook onions until softened, about 5 minutes.

Add garlic and cook for 1 minute.

Add carrots and potatoes; cook for 5 minutes, stirring occasionally.

Add beef broth, red wine (if using), and browned lamb. Stir to combine.

Bring stew to a boil, then reduce heat to low and simmer, covered, until lamb is tender, about 1 1/2 hours.

Season with thyme and salt and pepper to taste.
