Jamaican Grape Casserole
A sweet and savory vegan casserole inspired by Jamaican flavors.
Ingredients
- β1 cup, halved Grapes
- β1 cup, cubed (such as jackfruit or portobello mushrooms) Tender
- β1 tsp Jamaican allspice
- β1 cup, diced Tomatoes
- β1 box Casserole mix
- β2 tbsp Coconut oil
- β1 tsp Nutritional yeast
- βto taste Salt

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat coconut oil over medium heat.

Add the cubed tender and cook until browned, about 5 minutes.

Add the diced tomatoes, Jamaican allspice, and nutritional yeast to the skillet. Cook for an additional 2-3 minutes.

In a separate bowl, mix the casserole mix with water according to package instructions.

In a 9x13 inch baking dish, create a layer of the casserole mixture.

Top the casserole mixture with the grape halves.

Add the tender and tomato mixture on top of the grapes.

Repeat the layers, ending with a layer of casserole mixture on top.

Bake for 30-40 minutes, or until the casserole is hot and the top is golden brown.
