Vietnamese Chicken Banh Mi
A delicious Vietnamese sandwich made with crispy pickled carrots, cilantro, and grilled chicken.

- β4-6 inches long Banh mi bread
- β1/2 cup Cucumberthinly sliced
- β1/2 cup Carrotsthinly sliced and pickled
- β1/4 cup Cilantrochopped
- β2 tablespoons Mayonnaiseoptional
- β2 tablespoons Pickle relishoptional
- β1 teaspoon Sriracha sauceoptional
- βto taste Salt

3. Grill the chicken breast for 5-6 minutes per side, or until it reaches an internal temperature of 165Β°F.

4. Meanwhile, toast the banh mi bread by grilling it for 1-2 minutes or until it is lightly browned.
