Eastern Flatbread and Potatoes
A simple flatbread dish originating from the Eastern region, often served with boiled potatoes.

- ●3-4 Jersey royal potatoesunpeeled
- ●2 large pieces Eastern flatbreadpreferably day-old
- ●1 large one Tender potatoesoptional, for extra flavor
- ●1 tsp dried or 1 tbsp fresh Middle eastern herbssuch as thyme or oregano

Instructions

Preheat oven to 400°F (200°C).

Boil the Jersey royal potatoes until tender.

Brush the Eastern flatbread with olive oil on both sides.

Place the flatbread on a baking sheet and bake for 10 minutes.
