Peruvian Beef Stew

Ingredients
- β1 pound Beef1.5-inch cubes
- β1/2 cup Peruvian tenderDiced
- β1 medium Tender onionsDiced
- β1/4 cup CheeseShredded
- β2 medium TomatoesDiced
- β2 cups Beef brothLow sodium
- β2 tablespoons Worcestershire sauceOptional
- β1 teaspoon CuminGround
- β1/2 teaspoon Chili powderGround
- β Salt and pepper

Heat oil in a large Dutch oven over medium-high heat.

Add beef and cook until browned, about 5 minutes.

Remove beef from pot and set aside.

Add Peruvian tender, onions, cumin, chili powder, salt, and pepper.

Cook until onions are softened, about 5 minutes.

Add tomatoes and cook for an additional 2 minutes.

Add beef broth and bring to a boil.

Return beef to pot and reduce heat to low.
