Filipino Chicken Adobo
A classic Filipino dish made with marinated chicken cooked in vinegar, soy sauce, and garlic.
Ingredients
- β1 1/2 pounds chicken thighsbone-in, skin-on
- β1/2 cup vinegarapple cider vinegar
- β1/4 cup soy sauce
- β4 cloves garlicminced
- β1/4 teaspoon black pepper
- β2 bay leaves
- β1/4 teaspoon salt
- β2 teaspoons adobo seasoning

In a large bowl, whisk together vinegar, soy sauce, garlic, black pepper, and adobo seasoning.

Add the chicken to the marinade and mix until coated. Refrigerate for at least 30 minutes or up to 2 hours.

Heat 2 tablespoons of oil in a large skillet over medium-high heat.

Remove the chicken from the marinade, letting any excess liquid drip off. Add the chicken to the skillet and cook until browned on both sides, about 5-7 minutes.

Add the bay leaves and salt to the skillet and stir to combine.

Reduce heat to medium-low and simmer, covered, until the chicken is cooked through, about 15-20 minutes.

Remove the chicken from the skillet and let rest for 5 minutes before slicing.
