Malaysian-Style Satay Chicken
A classic Southeast Asian dish, this recipe features marinated chicken grilled to perfection and served with a side of peanut sauce. Perfect for a quick and flavorful dinner.
Ingredients

- β1/2 cup coconut milk
- β2 tbsp coriander
- β1 tsp cumin
- β1 tsp paprika
- βto taste salt
- β2 tbsp peanut oil
- β1/4 cup peanuts
- β2 tbsp lime juice
- β2 kalamansioptional

In a blender or food processor, combine coconut milk, coriander, cumin, paprika, and salt. Blend until smooth.

Add the blended mixture to a large bowl and add the chicken breast. Mix well to coat.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Preheat a grill or grill pan to medium-high heat.

Remove the chicken from the marinade, letting any excess liquid drip off.

Grill the chicken for 5-7 minutes per side, or until cooked through.

Meanwhile, heat the peanut oil in a small saucepan over medium heat.
