Peruvian Beef Stew
A hearty beef stew with Peruvian flavors, perfect for a cold evening.
Ingredients
- β1 pound beef stew meatcut into 1 1/2-inch cubes
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 peruvian aji amarillo peppersdiced
- β2 tablespoons tomato paste
- β1 cup beetroot juicefresh or store-bought
- β2 cups beef brothlow-sodium
- β1 cup white wineoptional

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef cubes in batches until browned on all sides, about 5 minutes per batch.

Remove the beef from the pot and set aside.

Reduce heat to medium and cook the onion, garlic, and peppers until the onion is translucent, about 5 minutes.

Add the tomato paste and cook for 1 minute, stirring constantly.

Stir in the beetroot juice, beef broth, and browned beef.

If using wine, add it to the pot.

Bring the stew to a boil, then cover the pot and transfer to the oven.

Bake at 300Β°F (150Β°C) for 2 1/2 hours, or until the beef is tender.
