Kabanos Stew
A hearty Brazilian-inspired stew made with kabanos sausage and tender vegetables.
Ingredients
- β1 pound kabanos sausagecut into bite-sized pieces
- β1 1/2 pounds tender beefcut into 1-inch cubes
- β1 large onionchopped
- β3 cloves garlicminced
- β1 cup tropical fruitdiced and chopped (such as pineapple, mango, or papaya)
- β2 cups stewbeef broth

Heat oil in a large Dutch oven over medium-high heat.

Add the kabanos sausage and cook until browned, about 5 minutes.

Remove the sausage from the pot and set aside.

Add the beef to the pot and cook until browned, about 5 minutes.

Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.

Add the tropical fruit and cook for an additional 2 minutes.

Add the beef broth to the pot and bring to a boil.

Return the kabanos sausage to the pot and reduce heat to low.

Simmer the stew for 1 1/2 hours or until the beef is tender.
