Twice-Baked Norwegian Potato Fritters
A twist on traditional potato pancakes, these twice-baked fritters are packed with the flavors of Norway. Serve as a side dish or snack.

- β1 teaspoon twicedried parsley
- β1/2 cup flourall-purpose
- β2 eggsbeaten
- β1/2 teaspoon saltoptional
- β2 tablespoons tendermilk

Preheat the oven to 400Β°F (200Β°C).

Grate the potatoes and squeeze out as much moisture as possible.

In a bowl, combine the grated potatoes, flour, eggs, salt, parsley, and milk. Mix well.

Using your hands, shape the mixture into small patties.

Heat a non-stick pan with 1/2 inch (1 cm) of oil over medium heat.
