Classic Ukrainian Borscht
A hearty beet-based borscht recipe with tender beef and a variety of vegetables, inspired by traditional Ukrainian cuisine.
Ingredients
- β1 pound Beefthinly sliced
- β2 large Beets
- β2 medium Carrots
- β1 large Onionschopped
- β3 cloves Garlicminced
- β2 cups Tomatoescanned
- β4 cups Vegetable broth
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β1 tablespoon Sugar

Heat 2 tablespoons of oil in a large pot over medium heat.

Add the sliced beef and cook until browned, about 5 minutes.

Remove the beef from the pot and set aside.

Add the chopped onions and minced garlic to the pot and cook until softened, about 5 minutes.

Add the sliced beets, carrots, and browned beef back to the pot.

Pour in the vegetable broth and add the canned tomatoes, salt, black pepper, and sugar.

Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes.
