Borlotti Bean Stew
A hearty, comforting stew made with borlotti beans and tender chunks of beef.

Ingredients
- β1 can borlotti beansdrained and rinsed
- β1 lb tender beefcut into 1-inch cubes
- β1 medium onionchopped
- β2 medium carrotpeeled and chopped
- β2 stalks celerychopped
- β2 tbsp tomato pasteoptional
- β2 cups beef brothhomemade or store-bought
- β1 cup red wineoptional
- βto taste salt
- βto taste black pepper

Instructions

Heat oil in a large pot over medium-high heat.

Add beef and cook until browned, about 5 minutes.

Remove beef and set aside.

Add onion, carrot, and celery to pot and cook until tender, about 5 minutes.

Add tomato paste and cook for 1 minute.

Add beef broth, wine (if using), salt, and pepper. Stir to combine.
