Baked Fish with Eastern Flair
A Mediterranean twist on traditional Italian seafood, featuring tender fish baked with a sweet and spicy eastern-style ganoush sauce.
Ingredients
- β4 Fish fillet (middle eastern seasoning)Any white fish, such as cod or tilapia
- β1/2 cup Ganoush sauce (eastern sweetened)Store-bought or homemade
- β2 Lemon wedgesFor serving
- β1/4 cup Fresh parsleyChopped, for garnish
- β2 tbsp Olive oilFor greasing the baking dish
- β1 tsp Garlic powderOptional, for added flavor
- βto taste Salt and pepperFor seasoning
- β1 cup Bread crumbs (gluten-free)For topping

Preheat oven to 400Β°F (200Β°C).

Line a baking dish with parchment paper, greasing with olive oil.

Place the fish fillets in the baking dish, leaving space between each fillet.

Drizzle the ganoush sauce over the fish, and sprinkle with garlic powder if using.

Season with salt and pepper to taste.

Sprinkle the bread crumbs evenly over the top of each fillet.

Bake for 12-15 minutes, or until the fish is cooked through and the bread crumbs are golden brown.

Remove from the oven, and garnish with chopped parsley and a squeeze of lemon juice.

Serve immediately, with additional lemon wedges on the side.
