Thai Shrimp Stir Fry
A quick and flavorful Thai-inspired shrimp stir fry with tender shrimp, toasted rice, and a tangy tom yum sauce.
Ingredients
- β1 pound Shrimppeeled and deveined
- β1 cup Toasted Ricecooked and cooled
- β2 tablespoons Tom Yum Saucehomemade or store-bought
- β1 cup Fresh Tomchopped
- β1/4 cup Thai Basilchopped
- β2 tablespoons Vegetable Oil
- βto taste Salt
- β1 teaspoon Sugar
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through.

Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil.

Add the chopped fresh tom and cook for 1-2 minutes, until slightly softened.

Add the toasted rice to the skillet and stir to combine with the tom.

Add the tom yum sauce to the skillet and stir to combine with the rice and tom.

Return the cooked shrimp to the skillet and stir to combine with the sauce.

Season with salt and sugar to taste.
