British Cod Pie
A comforting, creamy fish pie inspired by British cuisine, perfect for a cozy dinner.

- β1 cup cottage cheeselow-fat
- β1 cup roasted vegetablespeas, carrots, onions
- β1 sheet ultimate puff pastrythawed

Preheat oven to 375Β°F (190Β°C).

Line a baking sheet with parchment paper.

Place cod fillets on the prepared baking sheet and bake for 10-12 minutes or until cooked through.

In a large skillet, combine cottage cheese, roasted vegetables, and British seasoning blend. Cook over medium heat, stirring until heated through.

On a lightly floured surface, roll out puff pastry to a thickness of 1/8 inch.

Transfer the pastry to a 9x13 inch baking dish and trim the edges to fit.

Spoon the cottage cheese mixture over the pastry, leaving a 1 inch border around the edges.

Place the cooked cod fillets on top of the cottage cheese mixture.

Fold the edges of the pastry up over the cod fillets, pressing gently to seal.
