Quang Noodle Soup
A popular Vietnamese noodle soup made with a rich pork broth, Quang noodles, and various toppings.
Ingredients
- β200g Quang noodlespreferably fresh
- β1kg Pork bonesfor rich broth
- β2 tbsp Vegetable oilfor cooking
- β1 medium Oniondiced
- β2 inches Gingersliced
- β2 tbsp Fish sauceor to taste
- β1 tbsp Soy sauceor to taste
- β1 tsp Chilli flakesoptional
- β100g Bean sproutsfor garnish
- βhandful Fresh herbssuch as mint and basil
Instructions

1. Bring a large pot of water to a boil and cook the Quang noodles according to the package instructions.

2. In a separate pot, heat the vegetable oil over medium heat.

3. Add the diced onion and sliced ginger and cook until the onion is translucent.

4. Add the pork bones and cook for 5 minutes.

5. Add 4 cups of water to the pot and bring to a boil.

6. Reduce the heat to low and simmer for at least 1 hour, or overnight for a richer broth.

7. Strain the broth through a fine-mesh sieve into a clean pot and discard the solids.

8. Add the fish sauce, soy sauce, and chilli flakes (if using) to the broth and stir to combine.

9. Cook the Quang noodles according to the package instructions and divide among bowls.

10. Ladle the hot broth over the noodles and garnish with bean sprouts, fresh herbs, and a sprinkle of chilli flakes (if using).
