Greek Lamb Kebabs
Tender and flavorful lamb kebabs, marinated in classic Greek seasonings, perfect for a summer evening.
Ingredients
- β1.5 lbs Lamb shoulder, cut into 1-inch cubes
- β1/2 cup Greek yogurt
- β1/4 cup Olive oil
- β2 tbsp Lemon juice
- β2 cloves Garlic, minced
- β1 large Onion, thinly sliced
- β1/2 cup Kalamata olives, pitted
- β1/4 cup Fresh parsley, chopped

Preheat grill to medium-high heat.

In a large bowl, whisk together yogurt, olive oil, lemon juice, garlic, and a pinch of salt and pepper.

Add the lamb cubes to the marinade and mix well to coat.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Thread the lamb, onion, and olives onto skewers, leaving a little space between each piece.

Season the skewers with salt and pepper.

Grill the kebabs for 8-10 minutes per side, or until the lamb is cooked to your desired level of doneness.
