Spanish Paella with Saffron Rice
A classic Spanish dish made with flavorful saffron-infused rice and a variety of seafood. This paella is a perfect combination of flavors and textures.
Ingredients
- β2 tablespoons ultra-extra virgin olive oil
- β1 medium sweet onion
- β1/2 pound spanish chorizo
- β1 pound shrimp
- β1 pound mussels
- β1 cup uncooked spanish rice
- β1/2 teaspoon saffron threads
- β1 teaspoon smoked paprika
- βto taste salt
- βchopped (optional) fresh parsley
Instructions

Heat the olive oil in a large paella pan or skillet over medium-high heat.

Add the chorizo and cook, breaking it up with a spoon, until it is browned and crispy.

Add the onion and cook, stirring occasionally, until it is softened.

Add the shrimp and mussels and cook, stirring occasionally, until they are pink and the mussels are open.

Add the rice, saffron, smoked paprika, and salt. Stir to combine.

Cook, stirring occasionally, for 2-3 minutes.

Add 2 cups of water to the pan and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes or until the rice is tender and the liquid has been absorbed.
