Greek Lentil Stifado

- β250g Greek lentils
- β250ml stifado sauce
- β1 medium onionchopped
- β2 medium carrotpeeled and chopped
- β2 stalks celerychopped
- β2 tbsp tomato pastedissolved in 2 tbsp water
- β500ml umami broth

Instructions

Heat buttery oil in a large pot over medium heat.

Add chopped onion, carrot, and celery and cook until the vegetables are tender.

Add dissolved tomato paste and cook for 1 minute.

Add stifado sauce and umami broth, and bring to a boil.

Add lentils and reduce heat to low.
