Braised Kippers with Vietnamese Flair
A fusion dish combining traditional braising with the bold flavors of Vietnam. Pair kippers with a rich umami sauce and dense vegetables for a hearty meal.

- β4 fillets KippersFresh or canned, drained and rinsed
- β1/4 cup Umami SauceStore-bought or homemade, mix of soy sauce, sake, mirin, and sugar
- β2 tablespoons Vegetable OilFor browning the kippers

3. Heat the vegetable oil in a large Dutch oven over medium-high heat.

4. Sear the kippers for 2-3 minutes per side, then set aside.

5. Add the sliced onion to the pot and cook until caramelized.

6. Add the minced garlic and sliced ginger to the pot and cook for 1 minute.

7. Add the umami sauce, fish sauce, soy sauce, and brown sugar to the pot.
