French Mushroom Terrine
A rich and earthy terrine made with sautéed mushrooms, perfect for a dinner party.
Ingredients
- ●250g Fresh mushrooms
- ●2 tablespoons Umami-rich soy sauceoptional
- ●50g Butter
- ●1 baguette French breadstale or day-old bread works best
- ●1 Terrine moldapprox. 1L capacity
- ●fresh, chopped Parsleygarnish
- ●to taste Salt
- ●to taste Black pepper

1. Preheat the oven to 180°C (350°F).

2. Slice the bread into 1cm thick rounds and toast until lightly browned.

3. In a pan, melt the butter over medium heat and sauté the mushrooms until they release their moisture and start to brown.

4. Add the soy sauce (if using) and stir to combine.

5. In a separate bowl, mix the toasted bread, sautéed mushrooms, and chopped parsley.

6. Butter the terrine mold and layer the bread mixture, finishing with a layer of bread on top.

7. Cover the mold with parchment paper and weight with a plate or heavy object.

8. Refrigerate for at least 2 hours or overnight.

9. Serve chilled, garnished with additional parsley if desired.
