Peruvian Pork Roast with Umami Glaze
A savory Peruvian-inspired pork roast glazed with a rich umami sauce, perfect for a special occasion.
Ingredients
- β2 lbs Pork shoulderboneless
- β2 tsp Umami seasoning
- β3 cloves Roasted garlic
- β1 tsp Peruvian aji amarillo pepper
- β2 cups Roast vegetables (carrots, potatoes, onions)
- β1 tsp Brown sugar
- β2 tbsp Apple cider vinegar
- β2 tbsp Olive oil

Preheat oven to 400Β°F (200Β°C).

Season the pork shoulder with umami seasoning, salt, and pepper.

Heat olive oil in a large Dutch oven over medium-high heat. Sear the pork shoulder until browned on all sides, about 2-3 minutes per side.

Transfer the pork to a plate and set aside.

Add the roasted garlic, aji amarillo pepper, and brown sugar to the pot. Cook for 1 minute, stirring constantly.

Add the apple cider vinegar and bring to a simmer.

Return the pork to the pot and cover with a lid.

Transfer the pot to the preheated oven and roast for 20 minutes.

Add the roast vegetables to the pot and continue roasting for an additional 20-25 minutes, or until the pork is tender and the vegetables are cooked through.
