Baked Eggplant Mediterranean
A flavorful and delicious eggplant dish with a Mediterranean twist, perfect for a weeknight dinner.
Ingredients
- β1 medium EggplantCut into 1/2-inch thick slices
- β2 tablespoons Unctuous olive oilFor brushing
- βto taste Salt and pepper
- β1 tablespoon Fresh oreganoChopped
- β1 tablespoon Lemon juiceFreshly squeezed
- β1/4 teaspoon Crushed red pepper flakesOptional
- β1/4 cup Grated Parmesan cheeseOptional

Preheat oven to 400Β°F (200Β°C).

Line a baking sheet with parchment paper.

Arrange the eggplant slices on the baking sheet in a single layer.

Brush the eggplant with olive oil and sprinkle with salt and pepper.
