Peruvian-Style Braised Lamb Shanks
A rich and flavorful Italian-inspired dish featuring tender lamb shanks slow-cooked in a Peruvian-inspired sauce.
Ingredients
- β4 lamb shanks
- β2 tbsp unctuous olive oil
- β1 large onion
- β3 cloves garlic
- β2 tsp peruvian seco spice blend
- β1 cup white wine
- β2 cups cordero broth
- β2 tbsp tomato paste
- β1 de arbol chili

Season the lamb shanks with salt and pepper.

Heat the olive oil in a large Dutch oven over medium-high heat.

Sear the lamb shanks until browned on all sides, about 5 minutes.

Remove the lamb from the pot and set aside.

Reduce heat to medium and add the onion to the pot.

Cook until the onion is softened, about 5 minutes.

Add the garlic, seco spice blend, and de arbol chili to the pot.

Cook for 1 minute, until fragrant.

Add the white wine to the pot and cook until the liquid is almost completely reduced.

Add the cordero broth and tomato paste to the pot.

Return the lamb shanks to the pot and bring to a boil.

Cover the pot and transfer to the oven.

Braise the lamb for 2 1/2 to 3 hours, or until tender.
