Haddock Trofie with Italian Earthy Flair
A simple yet flavorful Italian dish featuring haddock and understated earthy tones.
Ingredients

- ●250g Trofie pasta
- ●3 tbsp Olive oil
- ●2 cloves Garlic
- ●1 Lemon
- ●1/4 cup Fresh parsley
- ●to taste Salt

- ●1 cup Cherry tomatoeshalved

Bring a large pot of salted water to a boil.

Cook trofie pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

Heat olive oil in a large skillet over medium heat.

Add garlic and sauté for 1-2 minutes until fragrant.

Add haddock fillets and cook for 3-4 minutes per side until cooked through.

Remove haddock from skillet and set aside.

Add cherry tomatoes to the skillet and cook for 2-3 minutes until they start to release their juices.

Stir in reserved pasta water, salt, and black pepper.

Add cooked trofie pasta to the skillet and toss to combine with the tomato mixture.

Slice cooked haddock into chunks and return to the skillet.
