Irish Lamb Casserole
A hearty, comforting casserole filled with tender lamb, roasted vegetables, and a hint of Irish flair.
Ingredients
- β1 1/2 pounds Lamb Shouldercut into 1-inch cubes
- β1 medium Onionchopped
- β2 medium Carrotspeeled and chopped
- β2 large Potatoespeeled and chopped
- β1/4 cup Chopped Fresh Parsleyoptional
- β2 tablespoons All-Purpose Flourfor dusting lamb
- β4 tablespoons Unsalted Butterdivided
- β1/4 cup Irish Stoutoptional

Preheat oven to 325Β°F (160Β°C).

Season lamb with salt and pepper. Dust with flour.

Heat 2 tablespoons butter in a large Dutch oven over medium-high heat. Sear lamb until browned, about 5 minutes. Remove lamb from pot and set aside.

Reduce heat to medium. Add remaining 2 tablespoons butter to pot. Add onion and cook until softened, about 5 minutes.

Add chopped carrots and potatoes to pot. Cook for 5 minutes.

Add browned lamb back to pot, along with any accumulated juices. Stir in Irish stout (if using).

Transfer pot to preheated oven and cover with lid. Braise lamb and vegetables for 2 1/2 hours, or until lamb is tender.

Remove pot from oven and sprinkle with chopped parsley (if using). Serve hot.
