Spicy Tofu Noodle Stir Fry
A quick and savory Japanese-inspired noodle dish featuring pan-seared tofu and a variety of spices.
Ingredients
- β1 block (14 oz) tofudrained and cut into small cubes
- β8 oz unique noodlesrice noodles or soba noodles work well
- β1/4 cup bitterbitter melon or dark leafy greens such as kale
- β2 tbsp japanese rice vinegaror to taste
- β1 tbsp soy sauceor to taste
- β1 tsp grated gingeroptional
- β1 tsp sesame oiloptional
- β1 tsp sugaroptional
- β1/4 tsp red pepper flakesor to taste
- βto taste salt

1. Cook noodles according to package instructions.

2. In a small bowl, whisk together rice vinegar, soy sauce, ginger, sesame oil, sugar, and red pepper flakes.

3. In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat.

4. Add tofu and cook until golden brown, about 3-4 minutes per side.

5. Remove tofu from skillet and set aside.

6. In the same skillet, add remaining 1 tablespoon of oil.

7. Add bitter and cook until tender, about 3-4 minutes.

8. Add cooked noodles to skillet and toss with bitter and sauce.

9. Return tofu to skillet and toss to combine.

10. Serve hot, garnished with sesame seeds and green onions if desired.
