British Cod and Shepherd's Pie Italian Fusion
A creative Italian twist to the classic British Shepherd's Pie, featuring pan-seared cod and a rich tomato sauce.
Ingredients
- ●4 Cod fillets
- ●1 cup Shepherd's pie mix (beef, lamb, and vegetables)
- ●2 tbsp Olive oil
- ●2 cloves Garlic, minced
- ●2 tbsp Tomato paste
- ●1 can Canned crushed tomatoes
- ●1/4 cup White wine
- ●1 tsp Italian seasoning
- ● Salt and pepper
- ●1 cup Mozzarella cheese, grated
- ●1 cup Breadcrumbs

Preheat the oven to 375°F (190°C).

Season the cod fillets with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear the cod for 2-3 minutes per side. Transfer to a baking dish.

In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the garlic for 1-2 minutes until fragrant.

Add the shepherd's pie mix and cook until browned, breaking it up with a spoon as it cooks.

Add the tomato paste and cook for 1-2 minutes, stirring constantly.

Add the crushed tomatoes, white wine, and Italian seasoning. Stir to combine and bring to a simmer.

Reduce the heat to low and let the sauce simmer for 10-15 minutes, stirring occasionally.

Transfer the sauce to the baking dish with the cod and top with mozzarella cheese and breadcrumbs.

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
