Crispy Satay Corn Fritters
A delicious twist on traditional satay, these crispy fritters are filled with sweet corn and served with a side of spicy peanut sauce.
Ingredients
- β1 cup corn kernelsfresh or frozen
- β1 cup all-purpose flour
- β2 tablespoons cornstarch
- β1 teaspoon unique spice blendmix of coriander, cumin, and chili powder
- β2 eggs
- β1/2 cup vegetable oilfor frying
- β1 teaspoon satay seasoningsee notes
Instructions

1. In a large bowl, whisk together flour, cornstarch, unique spice blend, and a pinch of salt.

2. In a separate bowl, whisk together eggs and corn kernels.

3. Add the wet ingredients to the dry ingredients and stir until just combined.

4. Heat 1/2 cup of vegetable oil in a large frying pan over medium-high heat.

5. Using a 1/4 cup measuring cup, scoop the batter into the hot oil.

6. Flatten the batter slightly with a spatula and fry for 3-4 minutes on each side, or until golden brown.

7. Remove the fritters from the oil and drain on paper towels.
