Italian Lentil Stew
A hearty, comforting Italian-inspired stew made with lentils, vegetables, and a hint of Peruvian spice. Perfect for a chilly evening.
Ingredients

- β2 tablespoons Olive oil
- β1 medium Onion
- β2 medium Carrots
- β2 stalks Celery
- β3 cloves Garlic
- β1 can Diced tomatoes
- β1 teaspoon Peruvian aji amarillo pepperoptional, for added heat
- β1 teaspoon Italian seasoning
- βto taste Salt and pepper

Heat the olive oil in a large pot over medium heat.

Add the onion, carrots, and celery, and cook until the vegetables are tender, about 5 minutes.

Add the garlic and cook for 1 minute, until fragrant.

Add the lentils, diced tomatoes, Peruvian aji amarillo pepper, and Italian seasoning. Stir to combine.

Season with salt and pepper to taste.
