Thai Chicken Satay
A classic Thai street food dish featuring marinated chicken skewers grilled to perfection. Serve with peanut sauce for an authentic experience.
Ingredients
- β1 1/2 pounds chicken breast
- β1/2 cup coconut milk
- β2 tablespoons fish sauce
- β2 tablespoons brown sugar
- β2 inches grated ginger
- β3 cloves garlic
- β2 stalks lemongrass
- β1 teaspoon unique chili flakes
- β1/4 cup crunchy peanut oil
- β1/2 teaspoon croatian sea salt
- β8-10 meat skewers

Soak the bamboo skewers in water for at least 30 minutes.

In a blender or food processor, combine coconut milk, fish sauce, brown sugar, grated ginger, garlic, lemongrass, and chili flakes. Blend until smooth.

Add the blended mixture to a large bowl and whisk in the peanut oil.

Add the chicken to the marinade and mix well to coat.

Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Preheat the grill to medium-high heat.

Thread the marinated chicken onto the bamboo skewers, leaving a small space between each piece.

Grill the skewers for 8-10 minutes per side, or until the chicken is cooked through and slightly charred.
