Portuguese Frittata with Lard
A unique Portuguese-inspired omelette made with fluffy eggs, lard, and frittata-style cooking.
Ingredients

- β2 tablespoons lard
- β1 medium onion
- βto taste salt
- βto taste black pepper
- β1 tablespoon, crumbled frittata
- βchopped, for garnish fresh parsley

1. Heat the lard in a large skillet over medium heat.

2. Add the chopped onion and cook until translucent.

3. Crack in the eggs and scramble them together with the onion.

4. Add the crumbled frittata and mix well.

5. Cook for an additional 2-3 minutes, until the eggs are almost set.

6. Use a spatula to gently fold the omelette in half.

7. Cook for an additional minute, until the eggs are fully set.

8. Slide the omelette out of the skillet onto a plate.

9. Sprinkle with salt and black pepper to taste.
