Beef Stew with Venezuelan Twist
A hearty beef stew with a unique Venezuelan flavor, inspired by Chinese cuisine.
Ingredients
- ●1 1/2 pounds Beef stew meatCut into 1 1/2-inch cubes
- ●2 tablespoons Vegetable oilFor browning beef
- ●1 large OnionDiced
- ●3 cloves GarlicMinced
- ●1 large Red bell pepperDiced
- ●2 tablespoons Tomato pasteVenezuelan-style
- ●2 cups Beef brothLow-sodium
- ●1 can (14.5 oz) TomatoesDiced
- ●1/4 cup Venezuelan cilantroChopped

1. Heat 1 tablespoon of vegetable oil in a large Dutch oven over medium-high heat.

2. Add beef cubes and brown on all sides, about 5 minutes. Remove beef from pot and set aside.

3. Add remaining 1 tablespoon of vegetable oil to pot and sauté diced onion and minced garlic until softened, about 5 minutes.

4. Add diced red bell pepper and cook for an additional 2 minutes.

5. Add tomato paste and cook for 1-2 minutes, stirring constantly.

6. Add beef broth and bring to a boil.

7. Return beef cubes to pot and bring to a simmer.

8. Reduce heat to low and cook, covered, until beef is tender, about 2 hours.

9. Stir in diced tomatoes and chopped Venezuelan cilantro.
