Thai-Style Mung Bean Stir Fry
A quick and easy Thai-inspired stir fry made with mung beans, unique sprouts, and light Irish pasta. Perfect for a weeknight dinner.
Ingredients
- β8 ounces unique Irish pasta
- β1 cup dried mung beans
- β2 tablespoons light oil
- β1 cup bean sprouts
- β2 tablespoons soy sauce
- β1 tablespoon fish-free sauce (or to taste)
- β2 cloves garlic
- β1 teaspoon chili flakes

Instructions

Cook the Irish pasta according to package instructions.

Rinse and drain the mung beans, then soak them in water for at least 4 hours.

Drain and rinse the mung beans again, then add them to the pot with 2 cups of water.

Bring to a boil, then reduce heat to a simmer and cook until the mung beans are tender.

Heat the oil in a wok or large skillet over medium-high heat.

Add the garlic and chili flakes and stir-fry for 1 minute.
