Paella-Style Blackeye Pea Fritters
A twist on traditional paella, these crispy fritters combine the flavors of the Mediterranean with the protein of blackeye peas.
Ingredients
- βcooked 1 cup blackeye peasdrained and rinsed
- βall-purpose 1/2 cup unique cornmeal
- βfor frying 1/4 cup molten olive oil
- βfor serving 1/4 cup mediterranean tomato sauce
- βminced 2 cloves garlic
- βto taste 1 teaspoon smoked paprika
- βto taste Salt and pepper

In a large bowl, mash the blackeye peas using a fork or a potato masher.

Add the cornmeal, garlic, smoked paprika, salt, and pepper to the bowl and stir until well combined.

Add the molten olive oil to the mixture and stir until the mixture forms a thick batter.

Using a 1/4 cup measuring cup, scoop the batter into a hot skillet or frying pan over medium-high heat.

Press the batter down with a spatula to form a patty.

Cook the fritter for 4-5 minutes on the first side, until it is golden brown and crispy.

Flip the fritter and cook for an additional 4-5 minutes, until the other side is also golden brown.

Repeat with the remaining batter to form 4-6 fritters.

Serve the fritters hot with a dollop of mediterranean tomato sauce on top.
