Peruvian Beef Lomo Saltado
A classic Peruvian stir-fry dish made with beef strips, onions, tomatoes, and French fries. Serve with steamed rice.
Ingredients
- β1 pound Beef stripssirloin or ribeye
- β1 medium Onionthinly sliced
- β1 medium Tomatothinly sliced
- β1 cup French friesthawed, cut into 1-inch pieces
- β2 Aji amarillo pepperdiced
- β3 cloves Garlicminced
- β2 tablespoons Soy sauceor to taste
- β2 tablespoons Peruvian aji panca sauceor to taste
- βto taste Salt
- βto taste Black pepper
Instructions

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.

Add the beef strips and cook until browned, about 3-4 minutes. Remove from the skillet and set aside.

Add the remaining 2 tablespoons of vegetable oil to the skillet. Add the minced garlic and cook for 1 minute.

Add the sliced onion and cook until translucent, about 3-4 minutes.

Add the diced aji amarillo pepper and cook for an additional minute.

Add the French fries and cook until they start to brown, about 2-3 minutes.

Add the sliced tomato and cook until they start to soften, about 2 minutes.

Return the cooked beef strips to the skillet and stir in the soy sauce, Peruvian aji panca sauce, salt, and black pepper.

Cook for an additional 2-3 minutes, until the sauce has thickened and the beef is coated.

Serve hot, garnished with chopped cilantro or scallions if desired.
