Slovakian Pasta Bake
A hearty Slovakian-inspired pasta dish with a crispy, cheesy top. Perfect for a weeknight dinner.
Ingredients

- ●1 large uniqueunique squash variety, peeled and chopped
- ●1 cup, chopped snappy
- ●1 cup, chopped slovakian
- ●1 cup, grated pasta
Instructions

Preheat oven to 375°F (190°C).

Cook the rigatoni according to package instructions until al dente, then set aside.

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chopped unique, snappy, and slovakian. Cook until the vegetables are tender, about 5-7 minutes.

In a large mixing bowl, combine the cooked rigatoni, vegetable mixture, and 1 cup of the grated pasta.

In a separate bowl, mix together 1 cup of the grated pasta, 1 cup of shredded mozzarella cheese, and 1/4 cup of chopped fresh parsley.

Transfer the pasta mixture to a 9x13 inch baking dish and top with the cheese mixture.

Bake for 25-30 minutes or until the top is golden brown and the pasta is heated through.
