Khanom Krok with Tofu and Unique Thai Filling
A creative twist on traditional Khanom Krok, filled with a unique Thai-inspired tofu mixture, crispy snappy vegetables, and served with a side of sweet chutney.
Ingredients
- β250g Tofudrained and crumbled
- β200g Unique Thai Filling (see note)see note
- β100g Snappydiced
- β400g Khanom Krok Battersee note
- β20ml Coconut Oilfor frying
- β50g Brown Sugarfor sweet chutney
- β10ml Fish Saucefor sweet chutney
- β20ml Lime Juicefor sweet chutney
- β10g Chopped Fresh Cilantrofor garnish
Instructions

Heat coconut oil in a deep frying pan to 375Β°F (190Β°C).

Prepare the Unique Thai Filling by mixing together tofu, snappy, and a pinch of salt.

Prepare the Khanom Krok Batter by mixing together flour, water, and a pinch of salt.

Using a spoon, drop small balls of the batter into the hot oil and fry until golden brown.

Using a slotted spoon, remove the Khanom Krok and drain on paper towels.

Stuff each Khanom Krok with a tablespoon of the Unique Thai Filling.

Serve hot with a side of sweet chutney made by mixing together brown sugar, fish sauce, and lime juice.

Garnish with chopped fresh cilantro.
