Crispy Chicken Quesadillas
A flavorful twist on traditional quesadillas, with crispy chicken and melted cheese.
Ingredients
- β1 1 pound boneless, skinless chicken breasts
- β1/2 1/2 cup all-purpose flour
- β1 1 teaspoon paprika
- β1/2 1/2 teaspoon cumin
- β1/4 1/4 teaspoon cayenne pepperoptional
- β2 2 large eggs
- β1 1 cup shredded Monterey Jack cheese
- β4 4 large flour tortillas
- β1/4 1/4 cup chopped fresh cilantro
- β1 Vegetable oil for frying

In a shallow dish, mix together flour, paprika, cumin, and cayenne pepper (if using).

Season chicken breasts with salt and pepper. Dredge chicken in flour mixture, shaking off excess.

In a separate dish, beat eggs. Dip floured chicken in eggs, then coat in flour mixture again.

Heat 1/2-inch of vegetable oil in a large skillet over medium-high. Fry chicken until golden brown and cooked through, about 5-6 minutes per side.

Transfer fried chicken to a plate and set aside.

In the same skillet, warm tortillas over medium heat for 1-2 minutes on each side.

Place a tortilla in the skillet, sprinkle with cheese, and top with a piece of fried chicken.

Fold tortilla in half to enclose filling. Cook for 2-3 minutes or until tortilla is crispy and cheese is melted.

Repeat with remaining tortillas and filling.

Cut quesadillas into wedges and serve with chopped cilantro and your favorite toppings.
