Woodfired Korean Cherry BBQ Ribs
Sweet and spicy Korean BBQ sauce pairs perfectly with tender woodfired ribs, served with a side of cherry chutney.
Ingredients
- β1.5 kg Beef Ribs
- β250ml Woodfired BBQ Saucehomemade or store-bought
- β2 tsp Korean Chili Flakes (gochugaru)
- β100g Cherry Jamhomemade or store-bought
- β100g Brown Sugar
- β100ml Soy Sauce
- β50ml Rice Vinegar
- β3 cloves Garlic
- β2cm Ginger
- β100g Cherry Chutneyhomemade or store-bought

Preheat woodfired grill to 120Β°C (250Β°F).

In a small bowl, mix together woodfired BBQ sauce, Korean chili flakes, brown sugar, soy sauce, rice vinegar, garlic, and ginger.

Place the beef ribs on the grill and brush the BBQ sauce mixture evenly over both sides of the ribs.

Close the grill lid and cook for 2 hours, or until the ribs are tender and caramelized.

During the last 10 minutes of cooking, brush the ribs with cherry jam and cook until caramelized.

Remove the ribs from the grill and let rest for 10 minutes before serving.

Serve with cherry chutney on the side.
